And with this, the Thanksgiving leftovers are done.
Mostly because I can’t stand to eat one more bite of turkey, but no one can say it didn’t go out in style. This was one of the best sandwiches (provided you consider a melt a sandwich) I’ve had in a very long time, and the only item I had to purchase was the fontina, which was on sale for $5.89 a pound at Grocery Outlet.
The amounts below are for 4 small melts; 2 per person. Obviously this could be scaled up or down depending on what you have on hand.
• 4 T cranberry-orange relish: $0*
• 2/3 cup (leftover) turkey, preferably smoked, chopped into 1/2-inch pieces: $0
• 4 thick slices homemade bread (about 1/3 of one loaf): 22 cents
• 4 oz. fontina, grated or thinly sliced ($2.85/8 oz. at Grocery Outlet): $1.43
TOTAL: $1.65/2 = 83 cents
*I used the majority of it in the muffins, so NOW I’m counting it as a valid leftover.
Toast bread on both sides under the broiler.
For each slice: Spread on about 1 T cranberry relish, top with 1/4 of the turkey, and cover with 1/4 of the fontina. Melt cheese under the broiler.
